
Double Tofu Broccoli Gratin

1Preheat the oven to 200°C (400°F) Fan. Add the frozen broccoli straight from the freezer to a lightly oiled casserole dish, preferably cast iron.

2Roast in the middle of the oven for 10 minutes.

3In the meantime, make the sauce. Add tofu, soy milk, onion powder, garlic powder, ground black pepper and salt to a small blender cup.

4Blend until smooth, about 2 minutes.

5If needed, cut the broccoli into even bite-sized pieces. Break the rest of the firm tofu into chunks using your hands and add it to the broccoli.

6Pour the sauce evenly over the broccoli and tofu.

7Top with breadcrumbs.

8Bake in the middle of the oven for 10 minutes.

9Transfer to plates and serve.
