Cauliflower Steaks in Oat Batter

160 g oat flour
1 tsp salt
1 tsp garlic powder
1 tsp baking powder

Yogurt Sauce:
200 ml plain yogurt | soy, oat or cashew
1 tsp apple cider vinegar
¼ tsp salt
ground black pepper for taste

1 tsp salt
1 tsp garlic powder
1 tsp baking powder

¾ cup plain yogurt | soy, oat or cashew
1 tsp apple cider vinegar
¼ tsp salt
ground black pepper for taste

Steps
1Preheat the oven to 200°C (400°F) Fan. Add flour, garlic powder, baking powder, and salt to a large mixing bowl.
2Whisk to distribute and add milk.
3Whisk to combine and set aside to soak.
4If the cauliflower has dirt or imperfections, peel it or carefully cut them out. Cut the cauliflower in half, then slice each half from the center to create two steak-like pieces.
5Dip each piece into the batter, coating both sides well.
6Place the coated pieces on a baking tray lined with baking paper. Break the remaining cauliflower into bite-sized pieces and toss them in the leftover batter. Arrange around the steaks. Pour any leftover batter over gaps.
7Roast in the middle of the oven for 30 minutes. Flip and roast for another 10 minutes, or until a golden crust forms and the steaks are tender inside.
8Transfer steaks to plates. In a bowl, mix yogurt, apple cider vinegar, and salt. Sprinkle with ground black pepper. Serve alongside the cauliflower steaks.
Notes

This recipe can also be made in a frying pan, though it will take longer as the cauliflower steaks will need to be cooked in batches. If you're preparing a smaller portion, you can use only the central “steak” cuts of the cauliflower. Store any leftover cauliflower in the fridge, either in a plastic bag or a glass container. If using only two steaks, make half of the batter.
