Amaranth Apple & Carrot Bowl

190 g amaranth
480 ml water
2 medium carrots, grated
2 medium apples, diced
200 g yogurt | soy, oat or cashew
30 g walnuts
4 g ground coconut
cinnamon for taste

Steps
1Add the amaranth to a cooking pot.
2Add water, stir and bring to a boil. Once boiling, reduce heat to low (induction #2), cover, and simmer for 20 minutes. Remove from heat and let sit, covered, for 5 minutes.

Alternatively use a pressure cooker: Add amaranth and water to a pressure cooker and cook for 5 minutes.
3Spoon the cooked amaranth into serving bowls.
4Add grated carrots and diced apples.
5Add yogurt.

Protein Boost: Add 30 g (1 oz) protein powder to the yogurt and mix to combine until smooth.
6Garnish with sliced walnuts and ground coconut. Sprinkle cinnamon over the yogurt.
